on homemade granola.

We love granola around here. But seriously? Not only is it expensive but they're packed full of sugar! You think you're being healthy until you realize the calorie per serving size is more than your weight. If you think that's bad, one glance at the serving size will just about turn you off to granola forever. (A TABLESPOON?!?!?!?!?!?!?)

Enter homemade granola.
This stuff is just wonderful. I can go on and on about it...you know just what you're eating, your house smells delicious, it can be used in countless ways, it stays fresh for up to two weeks, etc. etc. etc. I bake this stuff on Sundays, store it in a big glass jar, and we snack all week long. Mmmmm. There is nothing more satisfying than making homemade granola.

Homemade Granola (adapted from a combination of the best recipes online)

5 C oats
1 C shredded coconut
1/2 C packed brown sugar
2 T cinnamon
3 T vanilla
1 t salt
3/4 C vegetable oil
1/2 cup chopped nuts (optional, but it really adds to it! we used sliced almonds)
2 T sunflower seeds

Mix together & bake for an hour at 300 degrees. Stir every 20 minutes to get an even toast. Cool & store & enjoy!
